Here in New England, the rhubarb is ready for harvest. One of my favorite things to combine rhubarb with is strawberries. Rhubarb is a taste like no other. I can remember as a little girl, we had a big patch of rhubarb on the side of our house. I can remember my mother cutting the stalks of the rhubarb and trimming off the leaves. Does my memory serve me correctly that we used to dip the fresh stalks in sugar and chew on them? I can’t quite recall, but I do remember the strawberry rhubarb pie.
This strawberry rhubarb pie is delicious served warm with a big old scoop of vanilla ice cream. It comes together so simply and by using a pre-made pie crust, it can not get any easier. Here is what you will need.
Strawberry Rhubarb Pie Ingredients:
- 3 cups of rhubarb cut into 1/2 inch pieces.
- 3 cups of strawberries, cut into bite size pieces
- 1 1/4 cup of sugar
- 4 tablespoons of instant tapioca for thickening
- 2 tablespoons of orange juice
- 1 double pie crust
Preparation:
Preheat the oven to 400 degrees F.
First, trim off any leaves remaining on the rhubarb as they are poisonous. Then remove any fibrous strands. Cut the rhubarb and strawberries as above.
Combine all of the ingredients in a mixing bowl.
Let them sit for about 15 minutes to allow all the juices to incorporate.
Line a 10 inch pie plate with the first crust.
Pour in the strawberry rhubarb mixture.
Top with the final pie crust and put in a few slits with a sharp knife for the steam to escape or you can do a lattice like I did.
Place on a cookie sheet to prevent splatter and spilling and place in the oven.
Bake at 400 degrees F for 10 minutes, then lower the oven temperature down to 350 degree F.
Bake the strawberry rhubarb pie for an additional 35 to 40 minutes on the upper oven rack. If the crust browns too quickly, cover lightly with aluminum foil to complete the baking. Pie should be bubbling in the center when done. Remove and cool for at least 30 minutes to allow the pie to set.
Store your strawberry rhubarb pie in the refrigerator, that is if there is any remaining. You might just decide to eat the whole thing in one sitting.
