I love a good grilled cheese and tomato sandwich. I love it even more when it is accompanied with a fried egg! I added a bit of fresh herbs to this sandwich to take it to the next level. I think you’ll agree, it’s a good one.
Ingredients:
1 large egg
2 slices of bread
2 slices of cheese- I chose Cheddar and Monterey Jack
2 slices of tomato
butter
salt and pepper to taste
1/2 tbsp chopped fresh basil (dried can be substituted)
Preparation:
Melt a tablespoon of butter in a frying pan and fry up an egg as usual to your liking. While cooking, sprinkle the egg with a bit of basil, salt and pepper. Once cooked remove the egg from the pan and set it aside on a plate.
Assemble the sandwich:
Butter the outer sides of the bread slices.
Then top the bread with a slice of cheese, a slice of tomato, the fried egg, another tomato slice, the last slice of cheese, and top it off with the last slice of bread.
Return the sandwich to the pan. Cook on both sides until the bread is toasted up golden brown and the cheese is melted.
