I was inspired to get baking when I came across a cake on Pinterest from The Novice Chef. I changed the recipe up a little bit to decrease the sugar and suit my family’s needs. This cake is dense and moist. What came out of the oven was something so delicious and life altering, it would not be fair for me of me not to share.
Cake Ingredients:
1/2 cup of butter- room temperature
2 large eggs
4 oz cream cheese-room temperature
1 cup of fresh blueberries
2/3 cup of sugar
2 tsp vanilla extract
1 tablespoon orange juice
1 1/4 cup of flour
1 tsp baking powder
1/2 tsp of salt
Directions:
Preheat the oven to 350 degrees F.
Butter and flour a loaf pan and set it aside.
In a mixer, combine the butter and the cream cheese until smooth and creamy.
Next beat in both eggs until well incorporated.
Add the vanilla and the orange juice.
Next mix in the flour, sugar, baking powder and salt. Mix until well incorporated.
Remove the bowl from the mixer and fold in the blue berries with a spoon.
Spread the batter into your buttered and floured pan and bake for approximately 55 minutes. Cool for 20 minutes prior to removing the cake from the loaf pan.
Let it cool completely before frosting.
Frosting Ingredients:
4 oz cream cheese-room temperature
3 tablespoons of butter- room temperature
1 cup of powdered confectionery sugar
1/2 tsp vanilla
Directions:
In a mixer, combine the butter and the cream cheese until creamy and fluffy.
Mix in vanilla. Then add the sugar and mix it in until well incorporated.
Frost the cake.
Store the cake in the refrigerator, if it even lasts that long!
