This week seems to have flown by so very quickly. I thought that I would share with you a very simple and easy chili recipe that is a real crowd pleaser with my family. It can simmer for as little as 20 minutes or as long as you like.
Ingredients:
1 pound ground beef
1 medium onion- diced
1 tbsp cumin
1 tbsp chili powder
3 cloves garlic-minced
2 16 oz. cans white kidney beans
1 16 oz. can red kidney beans
1 16 oz. can tomato sauce
1 16 oz. can diced tomatoes
1 cup chicken stock
1 cup beef stock
salt and pepper to taste
olive oil
shredded cheddar cheese for topping
Preparation:
Brown the beef, onions and garlic together in a bit of olive oil with salt and pepper, cumin and the chili powder.
If necessary pour off the fat, then add the remainder of the ingredients and simmer on low heat for approximately 30 minutes.
Serve topped with shredded cheddar cheese.

Tonight's meal was a toss-up between spaghetti with homemade meatballs and sauce or chili. I guess it's just that time of year in New England! 😉
Thanks for hosting the Blog Hop, Melissa!
Have a great week.

Oh yes, we are on the same wavelengths for sure on the dinners. I just love this time of year. Thank you for linking up to the hop again. It is a pleasure.
Thanks again for the invite to this fun blog hop! Chili sure does start sounding good this time of year! Also my spaghetti with "not-meatballs" that I linked up 🙂
I will definitely have to try yours. We love pasta dishes in this house. Thanks for linking up.
Tilly, Chili is one of my all time favorites! I like different types of chili and experimenting with spices.
Us too! It is so easy and versatile plus the kids eat it. In our house it is always a homerun for dinner. Thanks for joining us.
Thanks for hosting Melissa! I love that chili. I will have to give it a try real soon. Have a great week!
Thanks for linking up! Glad to see you here.
Howdy Melissa ( and the girls )!
Your chili in a hurry sounds wonderful! We love a good chili recipe at Dandelion House! I must give it a try! Thanks for hosting the hop this week! I'm sharing our family pumpkin picking outing!
Thanks Deb and thanks so much for linking up. Maybe you could share your chili recipe on your blog 🙂 We love chili!
I am new to your blog and have been so hungry for chili. So your recipe is simmering on the stove top as I write. I've been spending some time reading your older blogs and can see I will be spending a lot more time catching up. Boy did your words sound familiar about a teacher and writing. I will never be a grammar champion but who cares anymore!
Love your blog!!!
Welcome and thank you Junebug! I hope you enjoyed the chili 🙂
This chili looks yummy. We love chili and I make it often in the cooler months, but I never follow a recipe…just throw stuff in the pot. I'll even add vegetables that are in the crisper. (I know I'll have chili die-hards revolting on that one! lol)
Thanks for hosting and the invite, Melissa
Debbie 🙂
