Chili in a Hurry

This week seems to have flown by so very quickly.  I thought that I would share with you a very simple and easy chili recipe that is a real crowd pleaser with my family.  It can simmer for as little as 20 minutes or as long as you like.

Ingredients:

1 pound ground beef
1 medium onion- diced
1 tbsp cumin
1 tbsp chili powder
3 cloves garlic-minced
2 16 oz. cans white kidney beans
1 16 oz. can red kidney beans
1 16 oz. can tomato sauce
1 16 oz. can diced tomatoes
1 cup chicken stock
1 cup beef stock
salt and pepper to taste
olive oil
shredded cheddar cheese for topping

Preparation:
Brown the beef, onions and garlic together in a bit of olive oil with salt and pepper, cumin and the chili powder.
If necessary pour off the fat, then add the remainder of the ingredients and simmer on low heat for approximately 30 minutes.
Serve topped with shredded cheddar cheese.

  2. I am new to your blog and have been so hungry for chili. So your recipe is simmering on the stove top as I write. I've been spending some time reading your older blogs and can see I will be spending a lot more time catching up. Boy did your words sound familiar about a teacher and writing. I will never be a grammar champion but who cares anymore!

  3. This chili looks yummy. We love chili and I make it often in the cooler months, but I never follow a recipe…just throw stuff in the pot. I'll even add vegetables that are in the crisper. (I know I'll have chili die-hards revolting on that one! lol)
