Cheese Tortellini and Basil Bake

Yesterday, was one of those crazy, busy days and there did not seem to be enough time in the day. The majority of our day was occupied by a trip up to Boston. What should have been a 4 hour trip turned into a 7 hour ordeal. Exhausted, I came home and crashed. My son woke me up at 5:20pm. It was dark. I still had chicken chores to do and dinner to make. Days like that always call for easy dishes. I was craving comfort food and my Cheese Tortellini and Basil Bake was just what the doctor ordered!

Ingredients:

4 cups of cheese tortellini- cooked per package directions
1 diced onion
1/2 cup chopped spinach
2 cloves minced garlic
Olive oil
1 jar of your favorite pasta sauce
2 tablespoon fresh minced basil
2 cups of Mozzarella cheese
1/4 cup Parmesan cheese
1/4 cup of cream
salt and pepper to taste

Preparation:

In a sauce pan, add a couple tbsps of olive oil and saute the onions and garlic. Add the spinach and then saute. Salt and pepper to taste. To this, add the sauce, cream, Parmesan cheese and basil. Stir and bring to a simmer for 5 minutes.In a large bowl, combine the tortellini with the sauce and 1 cup of Mozzarella. Stir well and spread into a baking pan. Top with the remaining Mozzarella cheese and bake uncovered at 375 degrees for 20 minutes.
